At Capital Millers, we’re on a mission to put the flavour and nutrition back into flour, using the oldest tool in milling—stone. Our traditional stoneground method crushes organic grains between large stones, preserving the natural oils, vitamins, germ, and bran, resulting in tastier, more nutritious flour.

We work with local organic farmers to source the best wheat and rye, milling flour to order to ensure it’s fresh and alive. This means your bread is infused with incredible aroma and flavour, straight from the grain to your table.

Founded in 2018 by the sourdough-obsessed team at Shelly Bay Baker in Wellington, we created Capital Millers to bring high-quality organic New Zealand flour to bakers everywhere. We still bake with it every day, so it has to be the best.
